The Food Safety Agency of Bosnia and Herzegovina has submitted a request to the European Commission for the registration of Gatački Kajmak made in sheepskin (mješina) as a product with a protected designation of origin. The request has been accepted and officially published in the EU Register of Geographical Indications.
Prior to this, Gatački Kajmak was registered within Bosnia and Herzegovina in accordance with the Rulebook on Quality Systems for Food Products — a necessary prerequisite for submitting an EU-level application, the Agency stated.
This traditional delicacy is made by aging thermally treated full-fat cow’s milk — from the indigenous Gatačko cattle breed — in a cleaned and prepared sheep’s skin.
No thickeners, artificial flavors, or starter cultures are added in the production process. The only permitted additive is table salt, making it a purely natural and authentic product.
