First, make a few slashes on the carp and season it with salt, both inside and out. In a suitable baking tray, pour oil and place the carp. While roasting, baste the carp with its own juices, and near the end of the cooking time, add wine to the tray.

When serving, pour the juices from the tray over the fish and sprinkle with garlic and parsley.

For the side dish, sauté onions, then add rice, a bit of water, and some wine. Add parsley and dried plums that have been soaked in warm water beforehand.

This hearty dish offers a taste of the region's culinary traditions, combining the richness of fish with the subtle sweetness of dried plums, creating a delicious and memorable meal.
