The world's most expensive ice cream, named Byakuya (which translates to "White Night"), comes with an astonishing price tag of €6,211.

This luxurious summer treat is produced in Japan by the high-end brand Cellato, owned by the Japanese company OMER Ltd. The ice cream costs 873,400 Japanese yen, which equals approximately €6,211.

On March 25, 2023, Byakuya earned a place in the Guinness World Records as the most expensive ice cream in the world.

Available exclusively through online orders, the brand aims to showcase a fusion of Japanese tradition and top-tier gastronomy. The recipe was developed over the course of a year and a half by Tadayoshi Yamada, a renowned chef known for his expertise in French-Japanese fusion cuisine.

The dessert includes some of the world’s rarest and priciest ingredients:

White truffle from Alba, Italy – one of the most exclusive delicacies on the planet,

Parmigiano Reggiano cheese,

Sake kasu – a fermented rice paste byproduct from sake production,

Edible gold leaf, and

White truffle oil, which is added just before serving.

Byakuya is presented in a special serving glass accompanied by a handcrafted metal spoon made by Kazarikanagu Takeuchi, a Kyoto-based workshop famous for creating ornamental metal fittings for traditional Japanese temples.

Before consumption, the ice cream must be softened. It is topped with white truffle oil and gently stirred. If it remains too firm, it is recommended to let it sit at room temperature briefly or microwave it for 10 seconds.
