In the Kraljevo region, locals know all the secrets to preparing this traditional dish. Whether served plain or with added ingredients, proja made from white cornmeal is always a staple on the tables of Kraljevo's households.
The key ingredient in this specialty is the cornmeal, ideally ground under a millstone, which gives the dish its authentic taste.
Preparing proja, which has even made it onto the list of the world's best breads, is quite simple.
"The most important things you need are a skilled cook, good stone-ground cornmeal, plain water, and baking soda. That’s what makes real, traditional proja," says Zagorka Radojević from Ratina.
To preserve tradition, Zagorka lovingly passes her knowledge and experience in preparing proja and other old-fashioned dishes to younger generations.
