Ingredients:

2 large zucchinis

2 tablespoons olive oil

½ tablespoon salt

A pinch of black pepper

½ tablespoon garlic powder

A pinch of dried oregano or thyme (optional)

1 tablespoon grated Parmesan cheese (optional)

Instructions:

Wash and dry the zucchinis. Slice them into very thin rounds (2–3 mm thick) using a sharp knife or mandoline. The thinner the slices, the crispier the chips will be.

Place the slices between paper towels and gently press to remove excess moisture – this step is crucial for crispiness, so don’t skip it.

In a large bowl, toss the zucchini slices with olive oil, salt, pepper, and any other seasonings you'd like to use. Mix well to ensure each slice is evenly coated.

Preheat the oven to 120°C (250°F). Line a baking tray with parchment paper and arrange the zucchini slices in a single layer, making sure they don’t overlap.

Bake for 50–70 minutes, flipping the slices halfway through, until they are golden and crispy.

Remove from the oven and let cool for a few minutes – they will become even crispier as they cool.

Serve warm or at room temperature as a light snack, a side dish for BBQs or sandwiches, or with hummus or your favorite dip.
