In the region of Milan Knežina, traditional specialties like Vlašić cheese, kneževska cicvara, and Hungarian trout not only mark cultural heritage but also uphold the spirit of this area.
One prominent local producer is "Bajić Farm", situated on Mića Bajić's estate, a guardian of biodiversity who, like his ancestors, cultivates an old wheat variety called brkuša in a traditional manner.
Brkuša is considered one of the oldest indigenous wheat varieties from this area. Although it was phased out of production during the 1960s during the inventory of new hybrid varieties, it survived only in extensive agricultural areas, such as the mountainous regions of the Milan Knežina area. Brkuša is ground into integral flour called Brk, known for its digestible gluten and numerous antioxidant and radical-scavenging properties. This flour is used to make the famous kneževska pogaca and many other delicacies. This flour is also available on the market in the USA.
Let's not forget the artisanal "Žitos beer", a beer with a unique flavor and aroma, made with natural mountain spring water. Žitos will soon be available on tap and in pubs. These products represent added value that contributes to authentic and high-quality gastronomy and the offerings of this region.
The Milan Knežina area not only hides hidden gems but also invites researchers and lovers of gastronomy, culture, tradition, and nature to embark on this exceptional journey. This area not only preserves heritage but also offers an exceptional experience for all who visit.
