BANJA LUKA'S ĆEVAPI RECEIVES OFFICIAL RECOGNITION AND STATUS
The expert team tasked with drafting the specifications for Banja Luka's ćevapi has completed its six-month endeavor to outline the specifications for Banja Luka's ćevapi as a guaranteed traditional dish, a requirement for branding this traditional specialty of ours.
This statement comes from the Department for Catering and Local Economic Development, with the authorized signatory of the department stating that the creation of specifications for Banja Luka's ćevapi to acquire the status of a protected traditional specialty is a complex process.
"This process involved drafting product descriptions, including its main physical, chemical, microbiological, and organoleptic properties that prove its specificity, along with conducting a series of laboratory analyses. It also included descriptions of the production method for both the ćevapi and the bread, which is an integral part of the guaranteed traditional dish, as well as the method of preparation," said Aleksandra Simić, the authorized signatory of the Department for Economic and Local Economic Development.
The specified documentation, along with other required paperwork, will be submitted to the Food Safety Agency of Bosnia and Herzegovina, which oversees the branding procedure. It is assumed that Banja Luka's ćevapi may receive a reputable status as a guaranteed traditional dish by spring.
Simić also added that the main contributors to these activities were eminent experts from the Faculty of Technology at the University of Banja Luka and the Public Institution Veterinary Institute of the Republika Srpska "Dr. Vaso Butozan," as well as members of the Association for Preserving "Banja Luka's Ćevapi" and renowned Banja Luka ćevap makers, along with producers of bread. Without their involvement, the process of creating specifications for Banja Luka's ćevapi as a guaranteed traditional dish would not have been conceivable.
