AMBASSADOR OF TRADITION AND TASTE: GATAČKI KAJMAK RECEIVES PROTECTED STATUS

Gatački kajmak, renowned for its unique flavor, has officially become an ambassador of tradition and taste, following the successful completion of its registration with the Food Safety Agency of Bosnia and Herzegovina.

This traditional product from Herzegovina has been granted protected status, adding value not only to the product itself but also to the entire region that proudly produces it. This news was confirmed by the Gacko municipality on its official website.

The Gatački Kajmak Producers Association, founded three years ago with the goal of preserving this authentic product, has achieved a key objective outlined in the Gacko Municipality Development Strategy for the period 2022–2028. According to the association's president, Dragana Milović, significant progress has been made, including the implementation of numerous projects that have strengthened the association's capacity and contributed to the promotion of both the kajmak and the local community.

- By protecting Gatački kajmak, we are preserving our tradition and the production of authentic products. This step has a significant impact on rural development and the recognition of our region, as well as the entire local community, Milović stated.

Support for this endeavor came from numerous institutions and individuals, including the Gacko municipality, Mayor Ognjen Milinković, and professors from the Faculty of Agriculture in Banja Luka. Additionally, projects like "ReLOaD Two," funded by the European Union, the Food and Agriculture Organization (FAO), and the "Slow Food Convivia" from Trebinje also played a key role.

Gatački kajmak has already been included in the prestigious Slow Food "Ark of Taste" catalog, further boosting its international promotion and encouraging continued production.

This significant step not only protects the local gastronomic identity but also provides a boost to tourism development and the strengthening of rural areas in Herzegovina. With its newly acquired protected status, Gatački kajmak continues to delight lovers of tradition and premium flavors.
