The soup is best served with homemade toasted bread.
Nettle soup is very healthy, full of nutrients, and requires little time to make.
Ingredients:
1 kg of young nettle leaves
2 liters of water
1 large onion
1 bunch of parsley
4 cloves of garlic
3 tablespoons of flour
2 tablespoons of seasoning blend
1 dl of apple or white vinegar and salt
If not fasting, add a tablespoon of sour cream when serving.
Preparation:
Wash the fresh nettle thoroughly and blanch it in boiling water, then remove it and finely chop it.
Add finely chopped onions and garlic to the water in which the nettle was cooked, as well as the previously chopped blanched nettle.
Simmer for about ten minutes, then season the soup with flour dissolved in cold water, seasoning blend, salt, vinegar (be careful not to overdo it), and finally add chopped parsley.
